Impossible Foods Is Working On Plant-Based Seafood

Impossible Foods is known for its patties made from plants that seem just like real meat, but now they’re hoping to make a splash with something new: a fish product that contains no fish. The California company is now developing a replacement for seafood using plant-based recipes or cells grown in a lab. To recreate the flavor of seafood, they’re using heme, a protein also used in their “meat” formula.

Impossible’s chief executive Pat Brown says they were able to create a plant-based broth last month that tasted like anchovies and was used to make paella. And they’re not stopping at seafood, the company hopes to offer a replacement for every animal-based food by 2035.
